Here in the Inland Empire there is no such thing as a cool place to go to hang out. Yes there is Victoria Gardens, but that’s a place for more shopping, dining, and movie watching. What the Inland Empire needs is a place where there’s available shopping, dining, and bars to hang out. Downtown Pasadena is a good example of this. It’s a mix of specialty shops, not malls, cool small restaurants, and plenty of bars to hang out.
Victoria Gardens is very contrived and was actually built to make it look like a cool urban downtown environment. Don’t get me wrong it’s not a bad, but there’s a fakeness to it. I wish places like Downtown Riverside would get out of their slum and start developing some real places to go hang out and shop. I’m sorry but old antique stores on the main pedestrian walk are not going to cut it. The stores on the main walk are made for people 60 and above. The bars are even worse out here. One bar is a real hole in the wall with clientele that looks like they escaped from prison that day. The other bar is Bro central with their big lifted trucks out in the front. There’s no sophistication in Riverside and that’s probably why the city is getting nowhere.
There are however, investors looking into the city of Riverside to get the city on track. Condos and supposed high end shopping centers are being proposed and hopefully green lighted to start. The area definitely needs this. Hopefully if the projects actually get approved, they’re going to need a website. I hear you! I find myself in the same situation. But, I ended up with my pantry over-flowing in dip and finally found some solutions. I hope they help you, too.
All you need to use your dip mix is sour cream, mayonnaise or cream cheese. From there, the possibilities are endless.
Tuna to the Rescue: If you enjoy tuna sandwiches, but get tired of the boring standard of tuna and mayonnaise, then make some ‘fancy’ mayonnaise. A few hours before you want your tuna sandwich, mix some mayonnaise and dip packet together. Let it sit. Then, when you want to enjoy your tuna sandwich, simple mix the ‘fancy mayonnaise’ with your tuna - and you’ve got a winner.
Turkey Wrappers: Have cream cheese sitting around? Mix it with some dip and microwave for a few seconds. Then, get out a tortilla wrapper, pile some of the cream cheese and turkey slices on the wrapper and microwave for another few seconds. The cream cheese should be all smooshy and the wrapper will roll up nicely. Add fresh veggies or just enjoy as is.
Potato - A cheap, healthy meal: Mix a packet of dip mix with a container of sour cream (to taste). Let it sit for at least one hour. Microwave or bake your potato as you normally would. Then, top with cheese, veggies, leftovers, meat, beans, etc - and a dollop of your flavored sour cream. Voila!
Pasta Salad - Any noodle salad that pairs mayonnaise with noodles can be enhanced with dip mix. It’s much cheaper than buying deli salads and it’s very simple. All you need are noodles, mayonnaise, dip mix, veggies and meat. Try it. You’ll love it!
So, use up those dusty dip packets and you just might find yourself becoming a fan of those little dip packets in your pantry.

This is my special blueberry muffin recipe that I created over
30 years ago and I like it so much that I have never stopped
using it, it has a magnificent flavor and a wonderful texture,
the freshness life of this muffin is about 4days but if frozen
it will last for months.
The part that I like about this muffin is that it is very
versatile, you can use any kind of fruit in it besides
blueberries, for example you can use cranberries, raspberries,
apples, and if you add some solid pack pumpkin with seasonings
you have pumpkin muffins and so on, let your imagination run
away with you. OK, here is the recipe. You know that all
ingredients should be room temperature.
12 medium eggs
2 teaspoons salt
2 cups oil (not peanut oil)
5 tablespoons baking powder
3 cups sugar
3 cups milk or water
8 cups flour
2 to 3 cups blueberries (frozen)
In a 5 quart mixing bowl place your eggs, salt, oil, using a
paddle mix slowly until blended then add sugar and baking
powder, and continue mixing on slow speed then add water or milk
and add flour slowly, when all flour is added scrape the sides
of the bowl and mix until smooth, remove bowl from mixer and
place 2 or 3 cups of blueberries in the mixture and blend in by
hand (frozen blueberries preferred) dip out into lined muffin
pans.
Bake for 25 to 30 minutes in convection oven and 35 to 40
minutes in regular oven at 350 degree preheated oven. This
recipe makes 2 dozen large muffins.
Prosciutto is a traditional aspect of charcuterie in French cooking. Simply, it is cured meat which is then cured and matured further by drying in air - leaving a wonderful, intensely flavored butchery product. Sliced thinly, and served with good, strong country-style mustard, dried fruits and black bread, it is a great lunch or part of a late autumn dinner.
Most prosciutto is made with pork. The recipe which follows is made with moulard duck breast. Moulard is a duck raised for foie gras, and its meat is typically more flavorful than domestic pekin, while not as gamy as wild mallard.
The magret is the lobe, or half breast of the moulard duck (each duck will have two magrets, or one full breast).
Moulard Magret Prosciutto
Salt/Spice Cure:
Ratio: This is an important part of any cured meat recipe. The salt ratio is especially important, the spice and garlic ratio which follows less so. Weigh you duck breasts and salt very carefully.
Per pound of Magret: (i.e., salt per weight of duck meat)
.7 OZ salt per pound of duck magret
Per Magret: (i.e., curing spices per unit of duck magret)
10 juniper berries
bay leaf, crushed
1 tsp coriander seed
10 black peppercorns
1 clove garlic
Crush to medium-fine juniper, bay leaf, coriander, peppercorns and garlic in mortar and pestle. Add salt and mix thoroughly.
Each Magret: Place large square plastic wrap on counter. Place Magret on wrap and place of mixture on Magret, skin side, spreading so it coats evenly. Turn over and repeat with flesh side. Roll wrap up tightly and seal edges and repeat for up to weekly need. Cure under refrigeration for 24 hours.
Air Cure:
Wipe cure off meat - do not rinse. Place Magret on large square of cheesecloth and wrap cheesecloth around Magret, ensuring cheesecloth fully covers meat. Place twine around Magret and secure Magret as if it were a roast, leaving a 6″ piece of twine free at one end. Hang in dry cooler at 38F for two weeks. Remove from cheesecloth, wrap in plastic and cut in paper-thin slices at service, freezing if needs be to obtain thin cuts (the freezing helps to firm up the duck breast, making it easier to slice thinly).
